I think it would be nice if we could put more forage items into preserves jars and kegs. We can process foraged fruits, but right now fiddlehead fern is the only forage item that can be turned into pickles or juice. I gathered many mushrooms ingame and it's kinda sad that they don't have a real use, why can't we make pickled mushrooms out of them? Spring onions don't have any use either, they're not even used in recipes or quests and they're not worth much (I know the last point changes with the beta). Or cave carrots, you get so many of them in the mines, but they don't heal much and don't sell for much either.
