Personally I like my potatoes plain depending on what type of potato. Jacket potato? I'll just have butter thanks. Mashed potato? Hook me up with some gravy! Chips (or fries for you filthy colonists)? I'm fine with that alone. But never, never, will I put sour cream or onions anywhere near my produce.

Why Colorado? That's pretty common all over the US. Butter, sour cream, chives and black pepper is the way to go for baked potatoes.

Unless you're talking baked sweet potatoes. Then it's butter and cinnamon, and those three things together are fantastic.

all white potatoes have a specificity : one is allowed to be fried but not mashed for exemple
I notice two kind of potatoes are special by the taste completly different from a white potatoes
the purple potatoes : vitelotte

and the second :sweet potato (google trad for that sorry don'tknow the word for : patate douce(it's the french name of it)
(ps it's one of the 3 major kind of "patate douce" we use)

heh They're sweet potatoes. Some people in the US call them yams for some reason, but you don't make sweet potato pie with yams.
