I'm having the exact same problem ever since the first update

Me also. Anyone ever figure it out?

I'm having the same problem in 10.6.8 as well. And there is a VERY good reason not to upgrade past 10.6 for some of us. With 10.7, Apple removed Rosetta, meaning that macs running 10.7 or later can't run ANY pre-2007 mac software; this makes upgrading the OS pretty much out of the question. It's a little disappointing, but apparently 10.8 is listed as the minimum specs on Steam.

Meanwhile, my computer still runs most new games over in 10.6.8...

It isn't a problem. If you go to the Steam page and scroll all the way down, THERE IS MINIMUM SPECIFICATIONS. The minimum for Mac is 10.8.0

The 10.8 req is supposedly temporary, though. They plan on optimizing for older systems eventually.

Update: Try deleting your player folder. For some reason this worked for me and a couple other people.

I don't even have a player folder. I'm running Snow Leopard and when i go, (username) > Library > Application support > steam> steamapps > common > Starbound, i get assets, linux32, linux64, starbound.app and win32. Do people have more than that?

I'm not extremely proficient at mac but I had to:
open the finder, click not he Go menu, hold Option and then go to the library from there.

    From there I went:
    Library/Application Support/Steam/SteamApps/common/Starbound

In the Starbound folder I have:
    assets, linux32, linux64, player, Starbound (the app), starbound.config, starbound.log, universe, and win32.

If you don't have all that in your folder, it's probably worth a reinstall.

The thing is, as far as I can tell, the player and universe folders are only generated once the game actually boots up.
If the game is crashing on startup, it can't generate the folders.

It worked as soon as I downloaded OS X Mavericks, so thanks all.

Hopefully 10.6.8 will work on this old iMac.

    OSX 10.6.8 user, here.

I looked inside starbound.app and threw the file 'starbound' into a text editor. Discovered some human-readable paths to various frameworks, including ones bundled in the app as well as ones already present on my system.

Other than the /usr/ folder, which I assume gets created by the app to store saved game files, the only thing missing from my system is AppKit/Versions/C/

My install of AppKit doesn't include a /C/. It does, however, include an /A/.

In other words, if they just roll back to an earlier version of AppKit, or bundle the /C/ version of AppKit with the executable, they can support 10.6, 10.7 and possibly even earlier macs.

I've contacted support via email to tell them about this, as well as posting crash reports every time a new version comes out, but so far I haven't gotten any response. But when I saw this thread, I wanted to post here so at least other mac users can know about it.

EDIT: Removed redundant crash report when I realized that's not what this thread is for. The rest of my post is relevant to OP's interests.

What? Why would you necro a thread about an old question to post a crash report?
Also, I know little about errors, but I think that's being caused by a hidden .DS_store file, in the players folder. Just google ".DS_store starbound" and you'll find some posts on these forums about the files and how to fix them.

I would imagine he's a mac owner who bought the game yesterday on steam, discovered that it didn't work, googled "Starbound OSX crash," and found this thread. That's certainly why I'm posting in this thread. (Of course, I found the official Crash Reports thread first, but this seemed to be where all the mac owners were hanging out.)
