Vendors in villages could sell ores. This is probably what's missing. I'd love to have that since mining isn't exactly my cup of tea either.

Deep Space isn't really necessary; I'm thinking more of planetary surface/asteroids. Instead of mining or clear cutting for the resources you need, you could visit towns and do favors for the locals, pick up bounties and collect them, rob refineries and labs, hold up cargo ships, or slaughter pirates for salvage.

Think of it this way though.
    Nobody clapped for Gone Home.
    NOBODY.
They tried to get them to do so.
STILL NOBODY CLAPPED, AND IT WAS INADVERTENTLY THE BEST THING EVER TO HAPPEN ON AN AWARDS SHOW.

I would love if they could flesh out the quest and side activities in this game. It would be nice. A little bit of X3

Then make your own game ? it seems like you are just asking for a totally different game. Do you understand the concept of a sandbox exploration game ?

For starters, if you want to get technical you are "starbound" in the fact that you cannot be anywhere except within a star system at any given time. Be it on a planet or a moon of a planet, you're within a star system.

Next, I really don't feel like repeating extensively long posts I've made on how you're fully capable of progressing through the game without ever mining further than a few blocks below the surface of any given world. If you honestly cannot conceive any alternative to progression than to dig to the center of a world, then that is your failure, my friend, not the game's and certainly not the devs'.

Edit: Even in your own post you mention stealing materials. GO DO IT! You can find iron and platinum and diamonds in random chests. Various amounts of loot is scattered all over the place!

This is among the worst retaliations to criticism. No, I will not "make my own game", that's not why I've supported the developers. I believed, and believe for that matter, that they aim to differentiate Starbound from Terraria or Minecraft by expanding on the exploration and science fiction elements. As it stands, I'm getting very little out of it that I would be unable to find in an already existing competitor.

And a sandbox exploration game doesn't have to be about tunneling deep within the earth like a mole or worm. As terrible and disappointing as Spore was, it's end game was built around both sandbox and exploration. And yet, it had nothing in common with Terraria or Minecraft.

Unfortunately, my spaceship seems to run mostly on fossil fuels and wood. Since travel costs are so high, I WILL need to either start clear cutting forests or digging for the coal to power my ship. There aren't any fuel stations or merchants that offer what I need to get from point A to point B.

There's a more efficient fuel than wood and coal.

If you fly up into a planet's atmosphere from the surface, you can find astroids rich in plutonium. Plutonium has a 1:6 ore:fuel ratio, making it very efficient.

Not really. NPC quests are planned for the game, and there has been talk about possible space battles go to along with the inevitable customization of your ship.

:O o_O You lie!!! .... Right? .... That isn't really true is it? I've been flying around in my gravity bubble far higher than I really should and have never seen this! .... *runs off to check*

Edit: Holy cow, he's right! My god that was a long way... even with gravity bubble it took a couple minutes to get there, but I almost died of heat loss the moment I got to it. Still -- very cool. Will have to remember that. And thanks :D

You know, You don't even have to mine in this game. All ores/bars can be found in chests.

Almost forgot about you, sry for offtopic there. *ahem* You do realize it takes 1 log travel around the planet (from moon to planet, planet to moon, moon to moon) and it only takes 50 logs to travel between planets in a system.... and it only takes 200 logs to travel to ANYWHERE IN THE UNIVERSE. I mean, that amount of fuel is maybe 10 trees worth of logs... seriously... you have nothing to complain about here.

Wait till full release until you can fully judge if the game has enough star bounding.

Back on the suggestion side of things, it would be fairly cool to have villages offer quests to " Go do that thing" with a reward of some resources, and they give you the coordinates of the place they want you to do "that thing" at.

That Thing could equal kill em all, We need eyeballs, WTF we need rainbow wood, Derpy 8 eyed lightning shooting horse boss dude is eating our villagers!... you know, basic filler quest stuff, add in basic factioning, with simple rewards for good faction takes care of 75% of what this fella is askin for, and it sounds pretty damn shiny to me as well. cant seem to finish finding platinum? cycle the quest dialog till they offer some!
