Am I the only one who doesn't feel monsters are too hard or irritating to deal with? And I'm not the "best" at combat either. First off, they removed the collision damage, so you can run past them without getting hurt. A couple seconds understanding their attack animations and it's very very easy to not get hit at all. There are also other options, such as the Iron Hunting Bow that one-shot everything I've come across. Grant it, you don't get pixels, but the meat is useful. And speaking of food, the bonuses food gives you help make combat even easier. I love mechanics that encourage the use of food. Not to mention that you can create a safe zone pretty quickly by building a screen-wide base of operations...as well as block mobs in while mining with the long reach of your matter manipulator.

Pixels are nice. You end up saving a nice stock of them while fighting mobs.

Honestly, if monsters were any easier they'd may as well get rid of them altogether. I can't be the only one who feels they have a great balance going on here, can I?

Play further into the game. Unstable level 8+ monsters were not something you wanted to sneak up on you. Just turn on a higher difficulty if you feel like you aren't being challenged.
