Discussion is about possible in-game content as mentioned in the OP, not humans being monkeys biologically, spiritually, mentally, or whatever.
So I'm guessing it's time to drop the nonsense discussion and stick on topic, regardless of the lack of information or not.

On-topic: Avians are awesome food. I'm still looking forward for playable cat races. I really do hope they are implemented someday!

I wouldn't call the Avians 100% original, it seems to be a blending of Aztec, (or mayan) and Chozo. And really any species can have an interesting culture.

 

Originality is over-rated. Technically Horus is the earliest example of a bird/man creature. If the devs try to limit themselves to solely original ideas, they are going to be stuck.

 

Cats have been done to death, I want rat people, that would be cool, or perhaps something less Earthy, like some race thats orange with two heads and only one eye on each, with tentacles as a lower body, I want some more alien type stuff.

I obviously didn't thougt birds were original but even if aztech-looking they perfectly fit in a space adventure and it's really nice.

I think the races will be all humanoids because of random generated armors.

I wouldn't mind seeing a feline race with Slavic influences to their culture and disposition. Viktor Vasko from http://www.lackadaisycats.com is a good example.

 

In all honesty, I am quite much disappointed by lack of survival-like gameplay. While I understand that not everyone may want to need to eat etc to survive, I'd like more complex needs in the future, if even as a part of some hard mode. Additionally, it seems that the space station players will already begin with - and quite developed to boot. For me, that's a waste of quite some potential gameplay again as, subjectively of course, it would be far more better if I could start the game with nothing, allowing me to acquire basic tools, find/build and develop a space station and so on.

 

MAYBE the Devs could add a Hard-mode like the one you described where you have X ammounts of days to GTFO the planet you are, build a rocket or whatnot before the big ka-boom. After the GTFO part, you find a broken space station and you start to repair it.
Addind the hunger system as well... Or not... making it an option (since most people won't appreciate that... I'm fine with both with or without that).

But really, thinking about it... it would make the game even bigger...

 

Of course, it being optional setting, maybe in server's config would be the best way to go as some people want casual space-y game with pew pew-ing cute penguins. I can assure you though, there are some players who would gladly go for a bit more mature, survivor-styled gameplay - and that's a thing Starbound could allow easily by adding a few turn on/off switches in server's options and a minor feature.
