How do I harvest crops?

I've grown some bananas and wheat for a long time, and they appear to be at maximum growth. But when I break them, they just drop seeds. Anybody know how I could taste the fruit of my labors?

 

Press e or middle-click them. You know, the "interact" button. Don't break them with a tool.
