Well, it really depends on how the devs make the terrain generator.
There will be a maximum depth that the system will ever create. The only question is, how deep will the devs implement?

Exactly 3,437 blocks deep, no more, no less.

I would imagine that it varies.

I guess about fifteen minutes of swimming, at the deepest.

Deeper than Twilight's story line, so, pretty shallow

Starbound: Still a better love story than Twilight. And also has more water.

I've encountered that so called World of Warcraft sea monster, never heard of any rumors until now though. I just assumed it was a glitch. Swimming in the ocean just north of the blood elf starter area, it is rather shallow. I honestly was bored and swimming out there for hours until my character was thrown from the water strait up with a loud noise like an explosion or roar. There was no 'monster' that I could see...but I do know I died for no reason. Though this gives me a wonderful...horrible...idea, a leviatain like boss somewhere...in some ocean... now I might just avoid swimming too deep without friends. Also...balrog...that is all.

Also, I think a 10-minute straight free-float down with no user interaction and no armor or anything equipped sounds good.

I'd sink to the bottom without armor...but gills apparently are only cosmetic.

If it's huge, terrifying sea monsters you guys want, you might like this. Glassiam from /r/starbound made it - this is the original post. He said it might feature in a mod when the game's released, so here's hoping!
