Can you flesh this suggestion out more though? Would it just be a background animal, or a farm animal? If the latter, what kind of produce would it... produce?
Goose feathers are very desirable as a pillow and quilt stuffing. They could be combined with the cloth produced from wool to create pillows, comforters, or a similar finished product as an artisanal good.
As @Lilliput stated, goose down is very desirable as stuffing for pillows, quilts, comforters and sleeping bags IRL. And goose eggs could be used in much the same ways as duck eggs and chicken eggs already are.
Pretty much this. I think aesthetically they're interesting and would be cool to see around the farm, but I don't see them functioning as anything but a re-skinned duck based on how they're described here. Really, couldn't they be semi-wild animals that show up in your ponds? Maybe you can run corn or sunflower seeds through the mill to get bird feed and then attract them to a bird feeder by the water. They could be seasonal wild animals drop their items as forage instead of being more domesticated animals that live in a coop year-round.
