I really got into the building part of Starbound. I have a huge village full of uniquely decorated houses. But I kept running into an annoying problem: I would think "okay, this house needs a metal table" and then realize I couldn't craft one. I'd need to hunt it down from some other structure. So I really think you should be able to craft different kinds of tables and chairs, like glitch and avian, as well as chests and bookshelves and cabinets. Also, blocks. I want to make houses out of temple bricks or other blocks that look more legitimate than dirt or cobblestone. Basically, if you can mine something up and place it later, i don't see why they can't make it craftable. Maybe it should be late game, and I'd understand excluding the more complicated technology, but I see no reason I can't make an avian bed for example.
Alot of the non-craftable (non-building block) items can be printed from your 3D printer, while this can get really expensive it is much easyer than trying to find all of them across the stars.
As limited as is now, there isn't much variety in crafting. Especially where blocks are concerned. however there is ore furniture, well some. Once you upgrade with each tier more options open up, and the portable 3D scanner unlocks some basic blocks as well that you can buy. I do agree there should be more, and sure that they will add some in the future... At least I am hoping they do. However I find myself modding crafting certain items in myself, just so I can. So for right now there are only a few options to do about it. Plus there are mods out there that do this purpose, at least that is an option for the time being. That is if you don't want to do modding yourself...
I should look into the 3d printer. The ore furniture is nice, however, almost all of it is modern looking and i like my starbound houses to look more medieval/fantasy. i just wish there was more variety. i'm also completely programming-illiterate and have no idea how to mod stuff so.
