I found this Avian Merchant ship, just a little ways left of where you land. You'll have to nerd pole up the anchor though. (the small arid planet)

How do you make notes in the log or on the map? The only thing I can see how to do is "Set Home" and "Go Home". Is there something I can press to edit names or leave notes or store coordinates?

Dang, I thought I had attached a screenshot with that information. Here it is: If I remember correctly it's threat level is less than 10, I think its around 5.

I'm starting to think ALL avian ships are on the same spot on the planets, not very far to the left

 

..I've actually never seen one to the east. I've seen over 15 airships.
