In case it wasn't mentioned here already, the Humble Freedom Bundle is a pretty great deal.
Almost all of the games in this bundle are excellent, and some of them (like The Witness) are worth more than the 30$ minimum on their own!

    RWBY.

Nirning clan. How's it been going while I've been away? I see you've managed to alienate Shinx while I've been gone.
(I feel like maybe I should take offense at you disliking Catgirls, Shinx, but, to be honest, I just can't bring myself to. There are types/styles of catgirl that I don't like and there are types/styles I do like. Blake's a type/style I like, Faris Nyannyan's not. To each their own.)

I wouldn't exactly use RWBY as an example of the pinnacle of Western animation, the animation quality is....Ehhh, getting better I suppose, the writing is and has always been incredibly iffy, sometimes it's fine other times it feels like they end each plot point with "And then they were saved by a Deus Ex Machina," and the voice acting has always been just OK.
Now if you want an example of great Western animation, I could list a few.

Yup. This season's animation looked rather clunky/robotic to be honest, and I felt the lack of shadows waay tooo much - It honestly looked unfinished.

Again, I would like to point out that's because they're using brand new software that they didn't use for the first three seasons. In a lot of ways Season 4's animation is a step-up from the first three seasons.

    Batman: The Animated Series
    Gargoyles
    Adventure Time
    Samurai Jack
    Powerpuff Girls
    X-Men (1992 Series)
    South Park
    Rocko's Modern Life
    Avatar: The Last Airbender
    Legend of Korra
    Ren & Stimpy
    Voltron (1984 and 2016)
    Animaniacs
    TMNT (2003)
    Thundercats (HOOOOOOOOOOOOOOOOOO 1985)
    Speed Racer (1967)
    Futurama
    Batman Beyond
    Phineas and Ferb
    The Transformers (1984)
    Steven's Universe
Teen Titans (Not that GO! shit)
    Gravity Falls
Star Vs. The Forces of Evil
    Rick and Morty
Pretty much every show by Seth McFarLane during their prime time (AKA the first like, 3-4 seasons of each show)

There's definitely more, the new seasons of FLCL that are coming out on Toonami definitely come to mind, but I can't say DEFINITIVELY that they'll be good, the same goes for Samurai Jack Season 5.
Also a good reason why Western Animation isn't nearly as strong as Japanese animation when it comes to quality and quantity is because Western animation thrives off non-serialized series and toy sales, so it's much easier to make LOADS of cash on a procedural show with high toy sales than a serialized show with low toy sales.

There are definitely shows that subvert this due to good network practices, including shows like Gravity Falls, which, while procedural to an EXTENT, does have an overarching plot that the show always leaves at least some kind of hint about.

Yeah, not a bad list. I generally forget about most of those because I haven't watched them in ages. I should really watch some of those again.
Also any of the superhero animated movies are great. If only the live action DC movies could be as good. (I've not seen many animated marvel movies sadly.)

How many levels of irony is this show on?

Opening is mediocre in terms of animation. Half of time it's people spinning in the air. I mean, come on. Music is alright, though.
Anime itself is... well, okay. If you want to casually rest or eat while watching something. I've seen 2 episodes so far.

Still, its rather rare to come across a show thats both made with adults/not toddlers in mind that isn't intentionally ugly. American media focuses more on long running series like Scrubs, Monk or Eureka all which focus pretty heavily on comedy. They're good but if you want animation theres not a lot in American media focusing to adults without being purely vulgar, aside from stuff made in the 40s (those were all pretty good).
Shows I really did enjoy at one point or another were Scrubs, Monk, Psych, Eureka, Stargate (except whatever that most recent one was), Bones, House and a few others that I can't quite remember the name of.

Theres a few on this list like Rick and Morty or Invader Zim (which many liked)/Courage the Cowardly Dog where I dislike the artstyle so much I can't stand to watch it.
I know you said the list wasn't exhaustive but I remember the Incredible World of Gumball to be pretty good too and feel it should be mentioned.

The planetary mining in Mass Effect 2 makes me feel like a locust.
I think I'm like, 2 story missions in? Maybe 4? Depending on whats counts as a side mission and I've already depleted 2 star clusters.

Huh, I tended to save that for the end. So right before the end of the game suddenly the galaxy ran out of metal.

On an unrelated note, I'm currently in an abusive relationship and I need help. How do I stop playing X-com Long War? So far all I've got is once I get my new computer I can play X-com 2 instead. (And then X-com modded. Then X-com 2 Long War. Then X-com 2 Long War modded. Then...

    And Melee Chrysalids and Mutons.
And Cover is for weaklings and cowards.
    So is armour.

I avoided listing too many shows that kinda fall within the same sorta time-frame and network or else I would have included The Amazing World of Gumball, Regular Show, and a shit load of superhero cartoons besides Batman.
