I looked up two quests so far, one because it was one of the earliest quests, at the top of my quest log, and it was BOTHERING ME SO MUCH. And the second because this guy basically said "Escort me in one of two ways" and wasn't toward either. He meant "Go and kill something somewhere there near where I'll be standing. Good luck finding it." Beyond that I've used exploration, my memory, journals, luck, and skill to make progress.

Edit: Also time is spent looking at the views. There are a lot of great views. It's great, it's a really pretty game.
