Bigger ship Creative Mass Effect I'll add more later when I explore the rest of the mods, but I believe bigger ship is a must cos the ship is small so you have to jam everything in or you can have creative and just reorganize the way the ship is to something more spacious
I have never really looked up any mods for this game. I probably wont until the game is out of Beta *shrugs*
Persistent Farmables and Colorbound are two of my favorites. But I'd also like to see customizable ships (I don't really want to mod it), perhaps an expanded character creation screen for the modded races, a delete button for unwanted/permadeath characters, and I'd like to be able to place objects next to each other without a visual gap. For example, two cabinets set side by side facing to the right would only show the front and top of the right-most cabinet, making them look like they are one seamless cabinet. I can mock up a picture if needed to show what I mean.
The Avali Race! FLUFFEH SPACE RAPTORS! I would love to see more things you can make with rubium, aegsalt, volium, impervium, durasteel, pretty much all tier 5+ metals and alloys, such as blocks like the titanium plating, it kinda looks out of place creating an impervium lamp or bed and placing it in a titanium built home.
I second the notion of the Avali race, especially if by adding it in you provided a way to customise the already-added clothes for their unique sprites. The only other one I can think of is Persistent Farmables, which in my opinion is a must.

- Persistent Farmables (Only as a work around until a proper implantation can be added.) Honestly a lot of mods used by me have been more fixes like this then alterations.. Maybe you guys could hire a extra programer to hop on things like this?

I agree with Persistent Farmables being implemented, until there is a proper fix for your crops not growing while you're not on that specific planet. Also, I know it's already in the works to have players able to upgrade their ship's size and get other races ships, but I'd love to see something along the lines of MadTulip's Spaceship mod in the final game; ships you can actually BUILD onto if you want, not just be stuck upgrading them in size. It gives players more freedom to design their ships, though there could just be the option for players to upgrade their ship's size and not have to build their own ship, for those that don't like building their own ships (or can get kinda lazy, like me sometimes XP).
