Is there a mod anywhere that changes the death system back to dropping all items on death? And also is there one that allows you to customize the death system the way you prefer?
No, but one could be made. Though if my understanding is correct, not very easily. Normal mode is set to have you drop all ores and bars, but it does so by name directly. I am not aware of a general "Drop all items on death" flag anywhere.
